互斥型相分离的理论及在食品领域的应用

摘要

在水溶液环境中,基于分子的自发运动特性,生物聚合物会呈现出互斥型相分离现象。近年来,生物聚合物及其所涉及的互斥型相分离相关分子分级的应用,受到了人们越来越多的关注。尤其在食品工业领域,借助这些相关方法,能够实现对特定颗粒的纯化操作,并且可以完成微胶囊的包埋处理。本综述从较为全面的视角,深入剖析了调控液-液生物聚合物在水溶液中发生分离的理论机制,同时阐述了这种特殊的分离方法在食品科学范畴下所具有的重要意义。围绕这些内容所展开的讨论要点,不仅针对目前在食品应用中运用相分离技术所面临的既有难题进行了剖析,还对其未来的发展可能性予以了探讨。而这一系列的研究与探讨,在依据食品属性来设计新型功能性食品的层面,展现出了极为可观的应用潜力。
